What is Sulphite Ammonium Caramel?

Sulphite ammonium caramel is a form of caramel (E 150a). Caramel colors are complex mixtures of substances that are produced by rapidly heating sugars such as glucose syrup, sucrose or invert and dextrose to 120 to 150 degrees.

Various acids, alkalis and salts, sulphites and/or ammonium compounds can be used in caramel colors E 150a to E 150d to accelerate caramelisation. Behind E 150c, for example, is ammonia caramel.

E 150d uses sulfite and ammonium compounds, hence the name ammonium sulfite or ammonium sulfite caramel. Certain restrictions do not apply to the coloring E 150d, but it may only be used in foods for which the use of additives is generally permitted.

Ammonium sulfite caramel is vegan.

For which foods is E 150d used?

The E 150d coloring came into public focus a few years ago when the state of California banned 4-methylimidazole (4-MEI), which is produced during roasting and can be contained as a by-product in certain caramel variants (E 150c and E 150d). classified as carcinogenic. As a result, companies such as Coca-Cola and Pepsi in the USA adjusted their formula.

The dye is still permitted in Europe, the permitted level is more than 1,500 times higher than that in California.

In addition to lemonades, these products also often contain the coloring E150d:

Is sugar lucur questionable?

The dye E 150d is classified as harmless, which is why no ADI value has been specified for it. ADI stands for “Acceptable Daily Intake”, i.e. the permitted daily dose for a food additive, but also for medicines and pesticides.

For the sum of all caramel this recommended intake is a maximum of 300 milligrams per kilogram of body weight.

Due to the 4-MEI contained in E 150d, however, there is a suspicion of cancer – which has so far only been proven in studies on mice. In animal experiments, 4-MEI also triggered convulsions. However, a person would have to ingest a ton of it to be at risk for cancer, according to US food inspectors. Specifically: more than 1,000 cans of cola per day.

If you want to be on the safe side or have allergies, you should still avoid products with E 150d, so study the list of ingredients accordingly and, if in doubt, use organic products. Because according to the EC Organic Regulation, food coloring should not be added to foods if they are only intended to give a certain color. Accordingly, dyes are completely prohibited in organic foods.

Anyone suffering from diabetes should generally avoid sugary products such as cola or sweets.
